No need for multiple pots and pans… you only need a cast iron pan (or other heavy frying pan) to make this homemade easy skillet recipe. While the chicken sweet potato skillet is cooking, toss together a quick side salad and you’ve got a satisfying complete meal that will feed a family of four.

You can use either chicken breasts or thighs in this Mexican chicken skillet, whichever you most prefer. Chicken thighs contain more fat and thus are considered more flavorful. Chicken breasts are leaner, have less fat and calories, and more protein than chicken thighs.

No matter which part of the chicken you use, be sure to follow safe poultry-handling techniques in the kitchen:
– Raw chicken should NOT be rinsed before cooking.
– Wash hands well before & after handling raw poultry.
– Use separate cooking tools for raw & cooked foods.
– Cooked poultry should reach an internal temp of 165F.
